DAY 8. Aug 26. SAUCES: Espagnole
HELL'S KITCHEN SEASON1! I have been watching and downloading nonstop and i decided to start again with Season1! Chef Gordon Ramsey is one scary scary person!
So for today's lecture, we are all officially sick in class. I stopped drinking my daily coffee since it's making my throat worse. I switched instead to drinking twinning's apple & cinnamon tea and it's doing wonders.
Sauce for today? Espagnole.
Again, this is a new word, but not really new on the taste buds. Espagnole or more commonly known as brown sauce (my keyword here is gravy?) is mostly used in steaks, beef and other pork dishes. Our task for today is to make all 8 sauces in 2hours! and that's just might hard for first timers! We started 6am and our serving time is 8am! Lo and behold, we finished around 10am! plating and washing of the dishes and all.
We have there the mother brown sauce, demiglace, poivrade, mushroom, lyonnaise, fonde lie, tomato sauce smooth, tomato sauce chunky...
Chef gave us 1 steak each to pair with the sauces and again, same with the veloute, we were all too tired and had too much tasting of the sauces to be fully satisfied eating the steaks!
Next week? Mayonnaise! (ughhhh)
