Stocks!

Day2. August 17, Stocks


Got my new kicks from Crocs. Bistro Shoes for P2,500 which i bought from BHS with my great friend, Jordan ( Crocks!)



Kinda getting used to this getting-up-4AM-driving-half-asleep thing. My reward is the awesome awesome sunrise that i witness while driving along Roxas Boulevard. Priceless.


Stocks, well, it's quite boring honestly. We just sat around the whole of the class time since basically, we just need to "skim the scum" the whole time the stocks are simmering.

We made 3 kinds, beef (Brown) stock (5-6hrs), fish (White) stock (1hr) and chicken stock (3-4hrs).

Oh! and here i learned how to make a Bouquet Garni for the spices. ( Thyme, Parsley stems, whole peppercorns, bayleaf and garlic). Below are our spices, white wine for fish stock, veggies etc.

And once we got our veggies ready, brunoised and all, we had to sweat it over low fire as such:



And yes, the kitchen twine and coffee filter is the bouquet garni being simmered with the beef stock.

Sigh! Everyday is such an interesting day. I don't know where the road will take me. After school, i mostly spend time on my own, going to different kitchen specialty stores, buying tools, exploring, asking questions.

I like the answers, i definitely do.

But for now, there's my so far 2 days of acads. It's already 10:44PM and i need to get some sleep.
