Baking!

Have i mentioned how i seriously hate baking?

Well, not that i hate baked goods, trust me I love them! It's just that baking or making any form of desserts for that matter, seems to have a serious all out war against me!

To explain myself further, exhibit A. Failed attempt of a tiramisu made last 2009:


everything resembles a puppy's mily poop! the whole thing just flopped inside. trust me, a sight not fanciful. 

orea crusted panna cotta with fruits on top circa 2009. now this one went okay, cept of course, it tasted nothing like panna cotta. The pannacotta which is supposed to be flanny and soft was quite firm and tasted a lot like vanilla extract and milk; Oreo crust, tooth crushing. 

Since then, i've made several attempts still, obviously not giving up on the ongoing war, but alas, just before culinary school, i finally admitted to myself that this is not my strongest suit and raised the proverbial white flag. 

But, much as i wanted to avoid it, i have to face my old enemy yet again. BAKING. such sweet name upon my lips. 



The baking part of the course lasted 3 days, ( Sept 5-7 ) and i have to say im proud that i fought and survived with dignity and vengeance and i shall not give up trying to learn how. We made scones, fritters, rugelach, muffins, biscuits, crepes and cookies. 






Now here's my favorite part: LEMON SQUARES! (yeheyyy!!)


 This is one of my faves tea partners, them lemon squares. So i really insisted that ill be the one to make these and oh gosh! Turns out, they're so darn gosh easy to make! =)





Okay now this part i definitely hate. BROWNIES. Our final assessment to end the baking course is making the last part of the course, which is brownies, cookies and the like. 

I got assigned with Cream Cheese brownies and i thought, whoopee, i like cream cheese brownies so this should be easy enough! But oh no, i said it too soon. I dont know exactly what happened, i must've added way too much butter in the (haha!) batter that after taking the brownies off the oven, there's a pool of butter floating on top of the already baked brownies! 

I thought, okay, relax, probably it'll be absorbed once it cools down, but oh no! i must've cooled it for about 45minutes already and boy, the butter is still afloat! 

So i had to call Chef May's attention and ask for help. 

My thoughts are correct, i indeed placed too much butter into the batter. I had to go and redo the entire thing. 
Thank goodness for my GFFs, who helped out mis-en-placing my ingredients and weighing them for me. 

The 2nd batch turned out just right, fudgy and chocolatey and all. =)
