DAY 6B. Aug 24 SAUCES: BECHAMEL.
I am starting to feel sick by now. The waking-up-at-4-in the morning has finally taken its toll on me. Throat itchy, head heavy and nose a bit runny. But it's not just me, it's me and almost 50% of the class. Whoever came up with this 6am-12nn class? You must be having a blast now! Ugh.
Anyway, we move on from soups to sauces and we touched on bechamel sauce first. Im pretty excited since it's actually my mom who taught me how to make this sauce when making pasta.
We made about 7 bechamel sauces. Honestly, that's new information! Here i was thinking that bechamel is just one distinct sauce, then Chef Anali tells us that there's more than 1! There's mornay, cream, cheddar, nantua, mushroom.. There's our Chef's hand checking if our bechamel is nappe.
